Have you ever wondered what goes down behind the scenes at Sfoglina? Or wanted to take a cooking class from a well-respected personality in the Denver culinary world?
Well just a few weeks ago we opened our kitchen doors to the Cornell Club of Colorado for a cooking class/demo on how to make our sweet potato gnocchi with pesto alla trapanese that we offered at the farmers markets this summer. It was led by Sfoglina owner, Jesse Albertini, where she prepared hors-d’oeuvres for the class, broke down each step of the process, and served the finished product.
As the class started arriving we had an array of appetizers ready including pickled vegetables from Switch Gears Farm, chicken liver mousse, roasted red pepper hummus, apple mostarda with apples from Ela Family Farms, and grilled bread. Members also had the option of bringing their own wine or beverages.
As the class warmed up and everyone arrived, we jumped right into it after a short introduction. Each member of the class was able to mix their own small portion of dough and gently roll out their personal little gnocchi pillows with the help and oversight from Jesse.
They went home with a serving of gnocchi, two personalized recipe cards, and some new kitchen tricks to impress their friends.
